Mushroom And Gruyère Cheese Stuffing For Chicken

Ingredients

For the stuffing:

1 pound dried button mushrooms, stems removed

2 tablespoons unsalted butter, melted

1 onion, coarsely chopped

6 cloves garlic, minced

2 cups dry white wine

1 cup chicken broth

1 cup heavy cream

3/4 cup grated Gruyère cheese

1/4 cup chopped recent parsley

1/4 cup chopped recent thyme

1 tablespoon kosher salt

1 teaspoon freshly floor black pepper

For the chicken:

1 whole roasting chicken (4-5 pounds)
