How To Make Chicken Enchiladas With Black Beans

1 1/2 cups shredded cooked chicken
1 15 ounce can black beans, drained and rinsed
1 15 ounce can corn, drained
1 15 ounce can diced tomatoes with green chilies, undrained
1/2 cup chopped onion
1/2 cup chopped green bell pepper
1/2 cup chopped purple bell pepper
1 10 ounce can pink enchilada sauce
1/2 cup shredded cheddar cheese
1/2 cup shredded Monterey Jack cheese
12 corn tortillas
For the Sauce:
1 cup chicken stock
2 tablespoons flour
2 tablespoons butter
1 teaspoon chili powder
1/2 teaspoon floor cumin
1/4 cup chopped onion
1/4 cup chopped green bell pepper
1/4 cup chopped pink bell pepper
Instructions
To Make the Enchiladas:
1. Preheat oven to 375 degrees F (190 degrees C). Grease a 9×13-inch baking dish.
2. Cook the chicken in a big skillet over medium heat until cooked through. Remove from warmth and shred the chicken.
3. Stir collectively the shredded chicken, black beans, corn, and salsa in a large bowl. Season with salt and pepper to style.
