Bold And Smoky Chipotle Chicken Gravy

Ingredients

For the chicken

1 complete chicken (about three pounds)

1 tablespoon olive oil

2 chipotle peppers in adobo, chopped

1 teaspoon smoked paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

Adobo Sauce: The sauce from canned chipotle peppers provides extra smokiness and warmth.

Chicken Broth: Rich and savory, chicken broth varieties the base of the gravy and provides depth of taste.

Flour: All-purpose flour acts as a thickener, giving the gravy its desired consistency.

Butter: Unsalted butter provides richness and a velvety texture.

Heavy Cream: Optional, heavy cream could be added for extra richness and creaminess.

Garlic: Minced garlic offers a subtle but aromatic flavor.

Instructions

To make the chicken

Ingredients:

  • 1 entire chicken (about 4 pounds)
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup chopped onion
  • 1/2 cup chopped green bell pepper
  • 1/2 cup chopped purple bell pepper
  • 3 cloves garlic, minced
  • 1 (12-ounce) can chipotle peppers in adobo sauce
  • 1 cup chicken broth
  • 1/4 cup heavy cream
  • Chopped fresh cilantro, for garnish

Instructions:

  1. Preheat oven to 425 levels F (220 levels C).
  2. Rinse chicken gravy inside and outside and pat dry. Place chicken in a roasting pan and rub with olive oil.
  3. In a small bowl, mix smoked paprika, cumin, salt, and pepper. Sprinkle spice combination over chicken.
  4. Roast chicken for 45-60 minutes, or until cooked through. Let chicken rest for 10 minutes before carving.
  5. While chicken is roasting, make the gravy. In a big saucepan, warmth olive oil over medium heat. Add onion, green pepper, and pink pepper and cook dinner until softened.
  6. Add garlic and cook for 1 minute extra. Stir in chipotle peppers and prepare dinner for two minutes.
  7. Add chicken broth and produce to a boil. Reduce warmth and simmer for 10 minutes.

To make the gravy

In a medium saucepan, warmth the oil over medium warmth.

Cook for 1 minute, or till fragrant.
