Bold And Smoky Chipotle Chicken Gravy
Ingredients
For the chicken
1 complete chicken (about three pounds)
1 tablespoon olive oil
2 chipotle peppers in adobo, chopped
1 teaspoon ground cumin
1 teaspoon smoked paprika
1/2 teaspoon salt
1/4 teaspoon black pepper

Instructions
To make the chicken
Ingredients:
- 1 entire chicken (about 4 pounds)
- 1 tablespoon olive oil
- 1 teaspoon smoked paprika
- 1/2 teaspoon ground cumin
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup chopped onion
- 1/2 cup chopped green bell pepper
- 1/2 cup chopped purple bell pepper
- 3 cloves garlic, minced
- 1 (12-ounce) can chipotle peppers in adobo sauce
- 1 cup chicken broth
- 1/4 cup heavy cream
- Chopped fresh cilantro, for garnish
Instructions:
- Preheat oven to 425 levels F (220 levels C).
- Rinse chicken gravy inside and outside and pat dry. Place chicken in a roasting pan and rub with olive oil.
- In a small bowl, mix smoked paprika, cumin, salt, and pepper. Sprinkle spice combination over chicken.
- Roast chicken for 45-60 minutes, or until cooked through. Let chicken rest for 10 minutes before carving.
- While chicken is roasting, make the gravy. In a big saucepan, warmth olive oil over medium heat. Add onion, green pepper, and pink pepper and cook dinner until softened.
- Add garlic and cook for 1 minute extra. Stir in chipotle peppers and prepare dinner for two minutes.
- Add chicken broth and produce to a boil. Reduce warmth and simmer for 10 minutes.
- Stir in heavy cream and cook dinner till heated through.
- Serve chicken with gravy and garnish with cilantro.
To make the gravy
In a medium saucepan, warmth the oil over medium warmth.
Add the onion and cook for five minutes, or until softened.
Add the garlic and cook dinner for 1 minute extra.
Stir in the chipotle peppers, adobo sauce, cumin, and oregano.
Cook for 1 minute, or till fragrant.
Whisk in the chicken broth and produce to a simmer.
Reduce warmth to low and simmer for quarter-hour, or till the gravy has thickened.
Season with salt and pepper to taste.
Serve over chicken, rice, or your favourite facet dish.
